I cook one main meat dish, cook up two or three veggies (or combinations) and then use those in various ways throughout the week. They may start off as dinners but can adapt to lunches and even breakfast - get added to salads and/or soups along the way. I alternate these foods with items from the pantry i.e. canned tuna, salmon or sardines on toast - eggs in various incarnations, or topping pastas or rice.
