Fruit and veggies are put in freezer bags and then vacuumed. I do NOT double wrap any bread products and I use them up with in a month. <br /><br />For canning I use fresh lids, Ball has came out with the suretight lids that says the seal lasts 18 months. I have had canned goods that was 3 yrs old and not a problem. Period! We were running out several times every week to do an errand here and there and had appointments on many days of the week plus meeting friends for breakfast, etc. All we do on Wed is away from the house stuff and nothing else and it has really helped. Some weeks we have 3 stops to make and others 8 but we keep going and get it done. I pack peanut butter sandwiches and fruit to keep us going and avoid arriving home mid afternoon starving.<br /><br />How will you keep 2 years worth of food without things going bad, getting freezer burnt, etc? We keep about 6 months worth and it seems to be a part time job managing it all. Just wanting to learn here.<br /><br />A note about biscuits-I use a stone baking sheet and it makes a real difference in mine. Beautiful browned bottoms and rising. I have no idea why but self rising flour of any type seems to make a better biscuit than adding baking powder, etc. Also real buttermilk and not the milk with vinegar makes a huge difference so I always have it in my fridge. It keeps way past the date. Just shake the heck out of it to get it mixed up and use it as long as you don't have mold growing under the cap. I drop mine with a 4 T. scoop and then flour the tops and pat them flat. SO much less mess and so much faster. I can get them ready for the oven before it gets preheated! As a Southern Mama I think I could make biscuits in my sleep!
