Canning lids for the Amish is the difference between having food during the year and going hungry.They even can their meat.
M said she still had green beans and tomatoes to can. She still has meat to can...she can kill the chickens as needed and the pig could be smoked but the cow has to be canned. Veggies and fruit are regular lids. Meat is wide mouth. I have 12 cases of wide mouth jars and 3 cases of regular jars with their lids and bands. I moved to the side for her. I gave her 10 boxes of regular lids I had. FYI she cans over 3000 jars of meat.It takes 3 qrts of meat a MEAL to feed her family. She does over 11,000 of veggies and over 6,000 of fruit.
Today I am going down to sort through what I can and see what else I can come up with for her. Hubby said worse would be we buy a freezer for their usage, that's a 16 ft freezer just for the cow.

That's so kind of you. I know canning supplies are in short supply everywhere although I did see some at Target the other day. Perhaps you could offer to go online for her and see if there are any (honest) companies that have some supplies to sell.
ReplyDeleteno stores withing 90 miles has any lids or jars. On back order until Oct... The one Amish bulk store is on the hunt and if they find any they will let us know and we will go get them for the store.
DeleteI just this week counted that if we eat the recommended 5 portions if veggies per day, out family needs over a ton of vegetables during the year. I can't store that much (even if I grow them by myself and during the growing season eat mostly from the garden). I shop, but making those calculations makes me think I'll need a bigger veggie plot. And a root cellar.
ReplyDeleteI know I am short 442 pints of having a year's supply of veggies and fruit in my pantry/freezers. I have 150 (a pint is 1 pound the world around) lbs of tomatoes and green tomatoes coming in either next Saturday or the Saturday after. I have 15 lbs of pie pumpkin also coming in. That leaves me 273 lbs short... 22.75 lbs a month that can be covered with fresh potatoes, onions, sweet potatoes , fresh carrots. We are on the high side of how much meat we eat. I eat 2200 to stay at 130 lbs. Hubby eats 3300 to stay at 245 lbs.

She just told Hubby if the change how they do their meat she should have enough but they did get the okay through their church that anyone needing to use an Englisher's freezer to get through until there are canning supplies can do so. Not something they okay usually.
DeleteHow many people do they feed at each meal? Or, are they using 3 quarts of meat for multiple families. I know it is hard to think about, but would they consider eating less meat, maybe more eggs? I would hate to be dependent on home canned foods that I canned.
ReplyDeletetheir lifestyle is 99 % home canned... always has been. They have 40 chickens... there are 11 of them so it's 2 dozen eggs every morning at is it. Not counting noodles, cakes, custard pies that are made daily also. They need the protein for the manual labor they do. I watched their 9 yr old son lifting 50 lbs bales of straw yesterday like it was nothing. The 12 yr old was tossing them up into the barn. They consume close to 5000 calories a day. And are not over weight.
DeleteI wonder how many kids your Amish neighbor has that it takes so much meat per meal. I've had home canned meat and a quart goes a long way. It is very tasty.

DeleteI thought I left a message earlier. Is this all for family at their table, or is she canning for several families? That is a lot of meat for one family for a meal, but I don't know how large that family is.

ReplyDeleteI don’t can’t much but i did buy 3 dozen jars back in March when shortages were starting.
We were at a farm store this week and all the jars they had left were dozens of flats of tiny 4 ounce jars. Those would be very impractical for your neighbor.
She doesn't even use pints for jelly or fruit butter.
